In search of the prefect 'Yeast'..... post no. 2
Apart from the blogathon that I
have jumped into there is another very important issue (!) which has been circling
inside my head for long and hold your breath, it is about getting hold of a
good yeast (!!) So that I can venture into bread baking..which I had been longing to do for so long.
This search for a good yeast has
been going on for so long that I have tried at least 4 to 5 types of yeast till
now, I brought a pack from kerala store in Delhi, then when I went to Kerala I
brought two packs from a bakery thinking that the kind of stuff they have at
their shop, definitely they must be selling good yeast and was excited about
trying it out.. then I brought packs from different bakeries in Delhi.. to
cut a long story short... none.. yes... NONE of the yeast ever worked.
During this Diwali I wanted to bake cinnamon rolls and started imagining the joy of my children when they will be eating
the perfect, melt in mouth cinnamon rolls made by their great Mom … but alas ..
nothing happened… the yeast did not even move. Leave alone rising, it adamantly
sat there looking at the sugar and warm water I added to it and then when I saw one
solitary bubble in a corner I was so excited that I went headlong into baking the
rolls. What I had at the end was cinnamon rolls which looked like cookies
and felt like bricks and which my children and I still ate because the flavours
where perfect except for the wrestling our mouths had to go through in getting
it down our throats !!
So the adamant me did not back
off, I pledged that I am going to find the right yeast and so I chatted with Sangeeta Khanna of the famous blog ‘health food desi videshi’ and
‘banaras ka khana’ ( go to her blog and you will find amazing breads baked by
her) because I know she lives in Delhi and the kind of breads she bakes she must
be using an amazing yeast as well… so she told me to get it from Jama Masjid
area, Delhi… she said that all the chole kulche walas also get it from there.
I am so thankful to her for the advise, but till now I could not find the time
to go and buy it form there or find any body to do it form me, so I continued
the search.
Finally, one day I came to know
about a particular brand of yeast which one blogger said that she uses and like
me she had also searched and searched for the right yeast that works rather than falling flat, and she
got hold of that brand online. I searched for it in all online stores but could not
find but in that process I found a brand call ‘urban platter’ and they had
yeast also which had more than 100 amazing reviews on amazon so I ordered it
and it arrived yesterday !!!! yoohooo….!!!
But the thing is I have to wait
till weekend to see whether it will live up to all the glorious reviews that it
has earned on amazon… so guess what … I Dreamed… yes really I dreamed of a bowl
full of raised dough which I had made with the yeast I had got yesterday, I
could feel the dough in my hands in the dream.. soft … raised and it was so
much fun punching it down before I put it on my bread baking tin… ha ha.. that
is how much this searching for the ‘good yeast’ business had affected me that I have started dreaming
of raised dough and yeast…. !!!
Do you have a ‘yeast searching
story’ like me… or anything similar and mundane as this which circled inside
your head so much that it appeared in your dream !!!
Ha ha, I had this fear of using yeast while baking. I was so sure that it wouldn't work the first time that I bought one of the smallest and also inexpensive pack of instant dry yeast - to my joy, it worked perfectly well. I did sort of mix it in lukewarm milk and some sugar before using it. Incase this helps you any bit (I hope it works for you as well as it did for me) this is the brand - Levure sèche de boulanger (http://www.kennygroceryonline.com/saf-instant-levure-sèche-de-boulanger-dry-baker-s-yeast.html)

I can so relate to your yeast searching expedition. I have done it for getting that perfect recipe for cupcakes and banana bread. I once wanted a particular shade of green for the curtains. I dont know how many shops I must have dragged my hubby along to get that 'mera wala green'. Glad that you finally got the yeast you were looking for. And hope you get super soft breads and rolls with it! Happy baking!
